Discover the secrets of wine
Allow me to introduce myself: Stephan Kofler, director of the Pazeider. About 21 years ago, wine was still uncharted territory for me. But then came my encounter with it – the learning, the numerous courses, and the continuous training – and finally, my passion was born. Today, I am driven by the curiosity for new taste experiences. The fascination of an unknown aroma and, above all, the digestibility of this extraordinary beverage are my motivation to continuously discover new wines. “Artisanal wines” – authentic craftsmanship – wine at its limits: these terms spark my interest. Wines created according to nature, so that together we can learn to understand the boundless art of winemaking.

Champagne tasting among friends with a surprise
27.08.24
At our regular tastings, not only South Tyrolean wines are served, but also fine wines from all over the world. On August 27th, I experienced an unforgettable evening dedicated to champagne. We tasted 18 different champagnes, including well-known names like Le Mesnil, Bollinger, Pol Roger, and Billecart-Salmon. It was a true firework of flavors: freshness, elegance, and sparkling moments that left us all speechless. But it's not just about champagne. The evening concluded with four still red wines: a brilliant finale with wines from Burgundy and Piedmont, whose tannic structure, like earth and wood, contrasted with the freshness of the champagne. And yes, the contrast was bold, but in the end, the two worlds complemented each other impressively, accompanied by culinary delights: an asparagus risotto with quail breast and a rack of lamb in a pistachio crust with barley risotto. A simple yet surprisingly harmonious combination of food and wine. Every evening is unique, a feast for the senses that shows us how wine and pleasure go hand in hand.
