WINE CELLAR
Since 1776 & More
As early as 1715, Gottlieb Siegmund Corvinus noted in “Nutzbares, galantes und curiöses Frauenzimmerlexicon”, Leipzig: A good wine requires COS, it should be tried with the 5 senses: It should have Coloren (a beautiful color), Odorem (a good smell), Saporem (a pleasant taste), and when poured, rush forth fresh.
Whether our family ancestors already knew this wisdom, we do not know. But we know that wine has been drunk at Pazeiderhof for generations. Whether wine was produced in-house or purchased from winemakers in the South Tyrolean surroundings is not documented. Today we offer you a variety of red, white and rosé wines from the region and numerous countries around the world. Try our specialties.
Those who appreciate wines with character will sense our close connection between craftsmanship, nature, and personal commitment. For several years now, we have been pressing the grapes from our own Pinot Noir ourselves – grown in the vineyard within the Pazeider Bio Healing Garden grounds.
In 2023, grapes from vines planted in 2020 were processed for the first time. Around 400 kg of grapes formed the basis for our deliberately limited production. In our modern equipped bodega, we accompany every step of winemaking with care: from fermentation in steel tanks to maturation in wooden barrels, where the wine develops its character.
From the 2023 harvest, around 350 bottles of a sulfur-free ORGANIC red wine are being produced, which can be experienced exclusively in our restaurant. During a walk through the Pazeider Healing Garden, you can discover the vines up close – gladly accompanied by host and wine enthusiast Stephan Kofler, who personally shares his experiences, his passion, and also the challenges of winemaking.
HISTORY
Those who can enjoy, drink no wine, but taste secrets
Our wine cellar is lovingly curated. The foundation of our selection is as simple as it is difficult: We look for wines that are created with a sensitive hand and with respect for nature. In addition to noble historical wines and classic South Tyrolean wines, we prefer individual, independent wines with regional and artisanal character. In the old stone cellar, however, not only is wine stored, but also tasted.
WINE SEMINARS
Would you like to learn more about our excellent wines?
Then come visit and experience an exclusive wine seminar with our passionate wine enthusiast Stephan Kofler. On Tuesdays, the historic wine cellar opens its doors from 9:00 PM. Discover carefully selected wines and lesser-known varieties. Here, topics such as acidity, minerality, tannins, structure, and alcohol are clearly explained and directly tasted. This is accompanied by South Tyrolean speck, sliced on the historic Berkel machine. We also taste various olive oils and extraordinary cheese varieties from South Tyrol and the rest of the world.
